2005 Cabernet Sauvignon, East Block, Paso Robles $32/ $384
15.3% alc. 185 cases produced
The East Block Cabernet Sauvignon from O'Neill Vineyards is the oldest block of Cabernet at the ranch. These vines are cane pruned and head trained with only four canes per vine at pruning. Intense canopy management and deficit irrigation techniques all contribute to the yields of less than one and a half tons per acre. The East Block vines are also on their own roots, lending to a more traditional terroir-driven wine with more earthy flavors consisting of leather, tobacco, cedar, and eucalyptus mint. Big fruit upfront dominate this wine followed up with a smooth fine grain tannin finish. This wine is ready to drink now but will also age nicely.

This is a very sumptuous, sexy Cabernet with a finish that is soft and round, with lingering notes of cassis and chocolate. According to Maureen, this is one of the best Cabs Shannon has ever made. Powerful and simultaneously restrained with hints of allspice, tobacco, and soft tannins. Sweet toasty oak and black cherries make this a "wish I had more while it lasted" kind of wine. An all-around excellent, well-balanced Cabernet. Expect it to age well up to 10 years.

2004 Cabernet Sauvignon, Hillside, Paso Robles $45/ $540
This wine is one for the ages! Intense varietal character with huge chewy tannins will enable this wine to age for the long haul. This is about as big as it gets for Cabernet Sauvignon. Grown on O'Neill Vineyards experimental "Hillside", super low yields resulted from intense canopy management and hand manicured farming techniques. One of the best of Maloy O'Neill's seven different Cabernet's from 2004. Get it now or forever hold your peace!

2004 Cabernet Sauvignon, Paso Robles $45/ $540

The grapes for this wine came from our Windy Hill Estate Vineyard. Picked two weeks earlier than the Gold Medal Winning 2004 Cabernet Sauvignon.  The Windy Hill wine has similar characteristics with big, extracted fruit. The supple mid-palate glides focused tannins into a seductive finish accented by notes of cedar and fine grains. At only 1 ton per acre, and super small clusters and berries, this is a good example of a wine with huge skin to juice ratio resulting in a dark, inky Cabernet.. A classic estate wine that can drink well upon release yet ages gracefully for 10-15 years.

Planted in 1966, this old dry farmed vineyard had seen its last days when the 2003 harvest arrived. Neglected for over ten years, the weeds in this vineyard were more prolific than the quality fruit, that no one was willing to realize. At a unbelievable low yield of .05 tons per acre, this wine will be able to age for the long haul. The French say that "the vines have must suffer to make good wine". These vines have suffered. There was only one cluster around every 15 vines. Get it while it lasts.

Big concentrated blackberry and cherry flavors stand out on this unfiltered and unfined monster. Produced from O'Neill Vineyards "East Block" old vines, this wine will definitely throw some sediment around. This wine shows true Cabernet varietal character, with ripe berry, earthy leather, chocolate, and toasted coffee. Lush dusty tannins give this well integrated wine the potential to age extremely well. Drink some now and lay some down for later. A truly great value!
